- Preheat oven to 375°F (190°C). Line a 9×13 inch baking pan with parchment paper.
- In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt.
- Cut in the cold, cubed butter until the mixture resembles coarse crumbs.
- Combine buttermilk and vanilla extract in a separate bowl. Pour into the dry ingredients and mix until just combined.
- Press the dough evenly into the prepared baking pan.
- In a small bowl, combine the brown sugar and ground cinnamon.
- Drizzle the melted butter over the base. Sprinkle the cinnamon-sugar mixture over the buttered base.
- Bake for 20–25 minutes, or until the edges are golden brown. Let cool completely.
- Beat the softened cream cheese and butter until smooth. Gradually add the powdered sugar, milk, and vanilla extract until creamy.
- Spread the cream cheese frosting evenly over the top. Cut into bars and serve.
Notes
These bars are best served fresh but can be stored in an airtight container for a few days. Feel free to add nuts or other mix-ins for extra flavor!
