  • 227 g Unsalted Butter cold
  • 200 g Granulated Sugar
  • 1 large Large Egg or flax egg for vegan option
  • 360 g All-Purpose Flour whole wheat optional
  • 1 tsp Baking Powder or baking soda can be substituted
  • 1 tsp Salt sea salt recommended
  • 85 g Jello Gelatin Powder regular only, avoid sugar-free
  • 200 g Additional Sugar for Rolling colored sugar for visual appeal

Method
 

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream together the softened unsalted butter and granulated sugar until light and fluffy.
  3. Add a large egg to the mixture and beat until fully combined.
  4. Whisk together the all-purpose flour, baking powder, and salt in a separate bowl.
  5. Gradually mix the dry ingredients into the creamed butter mixture until just combined.
  6. Divide the dough into 3-4 equal portions and mix in Jello powder flavors.
  7. Wrap the dough portions in plastic wrap and refrigerate for 15-20 minutes.
  8. Roll the chilled dough into balls and coat in sugar before flattening slightly.
  9. Bake in the preheated oven for 8-10 minutes, until edges are set.
  10. Cool on the baking sheet for 2 minutes before transferring to a wire rack.
