  • 2 cloves garlic cloves Finely mince or press for best flavor distribution.
  • 2 medium peaches Diced into small, even pieces for easy mixing.
  • 1 cup cherries Sweet or tart, pitted and halved as directed.
  • 1 handful cilantro Ensure stems are discarded and leaves are finely chopped for better texture.
  • 1 medium jalapeño pepper Remove seeds and membranes for less heat, or leave some for extra spice.
  • 0.5 small red onion Finely chop for a milder flavor and better integration into the salsa.
  • 1.5 medium limes Juice all limes and zest one for a bright, citrusy punch.
  • 0.5 tsp Salt Add gradually and adjust to your personal preference.

Method
 

  1. Begin by using a cherry pitter to remove the seeds from your cherries.
  2. Once the cherries are pitted, place them in a large bowl. Add the garlic cloves, peaches, cilantro, jalapeño pepper, red onion, lime juice, lime zest, and salt. Combine everything thoroughly by mixing well.
  3. To allow the flavors to meld together, place the bowl of salsa in the refrigerator. Let it chill and macerate for at least 15 minutes before serving.
