- In a saucepan, combine the sweetened condensed milk, chopped white chocolate, and margarine.
- Cook over low heat, stirring constantly, until the chocolate is completely melted.
- Continue stirring until the mixture pulls away from the bottom of the pan (brigadeiro consistency).
- Remove from heat and add the lemon zest, mixing well.
- Transfer to a greased plate and let cool completely.
- With greased hands, roll the brigadeiros.
- Roll in granulated sugar and finish with lemon zest on top.
Notes
For an even more pronounced flavor, use Sicilian lemon and avoid the juice, as it can curdle the dough. The zest adds aroma, freshness, and makes the brigadeiro perfect and balanced.
