- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, beat together softened butter and granulated sugar until light and fluffy.
- Mix in the egg and your chosen Jello flavor until well combined.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix!
- Using a cookie scoop or tablespoon, drop dough onto the prepared baking sheet, leaving space between each cookie for spreading.
- Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
- Let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
