Method
- Grease the slow cooker.
- In the slow cooker, whisk together honey, soy sauce, rice vinegar, mirin, ginger, garlic powder, onion powder, black pepper, and sesame oil.
- Add chicken breasts and turn to coat with sauce.
- Cook on low for 6 hours or high for 3 hours until tender.
- Remove chicken and shred using two forks.
- Strain remaining sauce into a saucepan and thicken with cornstarch mixed with water.
- Boil until thickened; mix half with shredded chicken and reserve half for serving.
- Serve over rice or alongside vegetables.
Notes
For added flavor, serve with steamed vegetables or over a bed of rice.
