- Pat the cod fillets dry with paper towels. Season both sides with a light sprinkle of salt and pepper.
- In a shallow bowl, stir together panko breadcrumbs, Parmesan, garlic powder, onion powder, oregano, paprika, and a pinch of salt and pepper.
- In a separate small bowl, combine mayo, Dijon mustard, and lemon juice. This mix doubles as both a coating and a flavor booster.
- Brush one side of each fillet with the mayo mixture. Press that side firmly into the breadcrumb-Parmesan blend, making sure it’s completely covered.
- Set your air fryer to 400°F (200°C) and let it preheat for about 5 minutes.
- Lightly mist the air fryer basket with cooking spray. Arrange fillets in a single layer with space between them. Cook for 10–12 minutes, flipping halfway through if needed.
- Remove the fillets carefully and top with fresh parsley. Serve hot with lemon wedges, a green salad, or roasted vegetables.
Notes
For extra crunch, ensure a thick coating of the breadcrumb mixture on the fish. Serve with a side of your favorite vegetables for a complete meal.
