Crispy Air Fryer Parmesan Cod

Ingredients
  

  • 680 g cod fillets about 6 oz each, fresh or thawed if frozen
  • 120 g panko breadcrumbs for that signature airy crunch
  • 50 g Parmesan cheese finely grated, the star of the crust
  • 1 tsp garlic powder brings warm, savory depth
  • 1 tsp onion powder adds a subtle sweetness
  • 1 tsp dried oregano a hint of herby flavor
  • 0.5 tsp paprika for smoky color and a little kick
  • 1 tsp salt to season every bite
  • 1 tsp black pepper to season every bite
  • 30 g fresh parsley chopped, optional but makes it pop
  • 60 ml mayonnaise helps the coating stick and keeps fish moist
  • 15 g Dijon mustard adds tang and brightness
  • 15 ml lemon juice freshens up the flavor

Method
 

  1. Pat the cod fillets dry with paper towels. Season both sides with a light sprinkle of salt and pepper.
  2. In a shallow bowl, stir together panko breadcrumbs, Parmesan, garlic powder, onion powder, oregano, paprika, and a pinch of salt and pepper.
  3. In a separate small bowl, combine mayo, Dijon mustard, and lemon juice. This mix doubles as both a coating and a flavor booster.
  4. Brush one side of each fillet with the mayo mixture. Press that side firmly into the breadcrumb-Parmesan blend, making sure it’s completely covered.
  5. Set your air fryer to 400°F (200°C) and let it preheat for about 5 minutes.
  6. Lightly mist the air fryer basket with cooking spray. Arrange fillets in a single layer with space between them. Cook for 10–12 minutes, flipping halfway through if needed.
  7. Remove the fillets carefully and top with fresh parsley. Serve hot with lemon wedges, a green salad, or roasted vegetables.

Notes

For extra crunch, ensure a thick coating of the breadcrumb mixture on the fish. Serve with a side of your favorite vegetables for a complete meal.
