Method
- Pat the cod fillets dry with paper towels and brush both sides with olive oil.
- In a shallow bowl, whisk together the eggs and water until combined.
- In another bowl, mix the panko breadcrumbs, paprika, garlic powder, salt, and black pepper.
- Dip each fillet into the egg mixture, then press into the breadcrumb mixture, coating evenly.
- Preheat the air fryer to 400°F (200°C) for 3 minutes.
- Place the coated fillets in the air fryer basket in a single layer and spray the tops lightly with cooking spray.
- Cook for 10–12 minutes, flipping halfway through, until the fish is golden brown and flakes easily with a fork.
- Carefully remove the fillets from the air fryer and serve immediately.

Serve these crispy fish fillets with a side of tartar sauce, lemon wedges, or your favorite roasted vegetables for a complete meal. Adjust cooking time slightly for thicker or thinner fillets.
