Ingredients
  

  • 4 pieces cod fillets Pat dry before coating for best crispiness.
  • 2 tbsp olive oil Used to brush the fish before breading.
  • 2 large eggs Whisk with water to create the egg wash.
  • 1 tbsp water Added to the eggs for a thinner wash.
  • 1 cup panko breadcrumbs Essential for achieving a crispy crust.
  • 1 tsp paprika Adds a warm color and mild flavor.
  • 0.5 tsp garlic powder Enhances the savory profile of the coating.
  • 0.5 tsp salt Seasoning for the breadcrumb mixture.
  • 0.25 tsp black pepper Adds a touch of sharpness to the seasoning.
  • 1 can cooking spray Use as needed to lightly coat the fish for extra crispiness.

Method
 

  1. Pat the cod fillets dry with paper towels and brush both sides with olive oil.
  2. In a shallow bowl, whisk together the eggs and water until combined.
  3. In another bowl, mix the panko breadcrumbs, paprika, garlic powder, salt, and black pepper.
  4. Dip each fillet into the egg mixture, then press into the breadcrumb mixture, coating evenly.
  5. Preheat the air fryer to 400°F (200°C) for 3 minutes.
  6. Place the coated fillets in the air fryer basket in a single layer and spray the tops lightly with cooking spray.
  7. Cook for 10–12 minutes, flipping halfway through, until the fish is golden brown and flakes easily with a fork.
  8. Carefully remove the fillets from the air fryer and serve immediately.

Notes

Serve these crispy fish fillets with a side of tartar sauce, lemon wedges, or your favorite roasted vegetables for a complete meal. Adjust cooking time slightly for thicker or thinner fillets.
