Ingredients
  

  • 680 g cod fillets fresh or thawed frozen
  • ml ml Olive oil or cooking spray for coating
  • 60 g all-purpose flour
  • 2 large eggs beaten
  • 100 g panko breadcrumbs
  • 25 g grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • to taste Salt and pepper
  • 1 Lemon wedges for serving

Method
 

  1. Pat dry cod fillets with paper towels. Set aside.
  2. Set up breading station: place flour in one bowl, beaten eggs in a second bowl, and combine panko breadcrumbs, Parmesan, garlic powder, smoked paprika, and salt & pepper in a third bowl.
  3. Dredge each fillet first in flour, then dip into eggs, and finally press into the breadcrumb mixture.
  4. Preheat air fryer to 400°F (200°C) and let warm for 3 minutes.
  5. Spray air fryer basket with cooking spray or brush with olive oil. Place fillets in a single layer and spray tops lightly with oil.
  6. Cook for 10-12 minutes, flipping halfway through, until golden brown and fish flakes easily with a fork.
  7. Check doneness; internal temperature should reach 145°F (63°C).
  8. Transfer to plates and serve immediately with lemon wedges.

Notes

For extra crispiness, make sure to pat the cod fillets dry before coating and lightly spray the tops with oil before cooking.
