  1. Pat the white fish fillets dry with paper towels to remove excess moisture. Cut large fillets into even portions for uniform cooking.
  2. In a mixing bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, pepper, garlic powder, and paprika. Gradually mix in the cold sparkling water until smooth.
  3. Lightly dredge the fish fillets in flour, shaking off excess. Dip each fillet into the batter for an even coating.
  4. Preheat your air fryer to 400°F (200°C). Spritz the air fryer basket with cooking spray, arrange the battered fish in a single layer, spray the tops lightly, and cook for 10-12 minutes, flipping halfway through.
