  • 1 tbsp Olive Oil light drizzle
  • 1 tsp Ground Cumin for flavor
  • 1 tsp Smoked Paprika for depth
  • 0.5 tsp Salt season to your preference
  • 0.25 tsp Pepper add a touch of warmth
  • 1 cup Fresh Pomegranate Seeds for a sweet and tangy topping
  • 2 tbsp Fresh Mint Leaves finely chopped for freshness
  • 1 cup Greek Yogurt or Labneh for a creamy and cooling dip

Method
 

  1. Preheat your air fryer to 400°F (200°C) for about 5 minutes.
  2. Slice a medium eggplant into ½-inch thick rounds.
  3. Place the eggplant slices in a bowl, drizzle with olive oil, then toss with ground cumin, smoked paprika, salt, and pepper.
  4. Arrange the seasoned eggplant rounds in a single layer inside the air fryer basket.
  5. Cook the eggplant rounds at 400°F (200°C) for 12–15 minutes, flipping them halfway through.
  6. In a small bowl, gently stir fresh pomegranate seeds with chopped mint leaves and a pinch of salt.
  7. Transfer the hot eggplant rounds to a serving platter and sprinkle the pomegranate-mint mixture over the top.
  8. Optionally, add a dollop of yogurt or sprinkle toasted pine nuts before serving.
