Ingredients
  

  • 340 g salmon fillets skin-on or skinless
  • 150 g roasted red peppers jarred or homemade
  • 120 g plain full-fat Greek yogurt
  • 20 g grated Parmesan cheese
  • 15 ml olive oil
  • 2 cloves garlic minced
  • 0.5 tsp smoked paprika
  • to taste salt
  • to taste black pepper
  • to garnish fresh parsley optional

Method
 

  1. Pat the salmon fillets dry and season both sides with salt and pepper. Set aside.
  2. Heat olive oil in a large skillet over medium heat. Add minced garlic and cook until fragrant, about 1 minute. Do not let it brown.
  3. In a blender, combine roasted red peppers, Greek yogurt, grated Parmesan, smoked paprika, salt, and pepper. Blend until smooth and creamy.
  4. Push the garlic around the pan, then add the salmon fillets skin-side down. Cook 4-5 minutes until the skin is crispy. Flip and cook another 3-4 minutes until salmon is just opaque and flakes easily.
  5. Reduce heat to low. Pour the creamy roasted red pepper sauce over the salmon in the pan. Gently warm the sauce for 2-3 minutes without boiling.
  6. Plate the salmon with extra sauce spooned on top. Garnish with fresh parsley if desired. Serve immediately.

Notes

This dish pairs well with a side of steamed vegetables or a fresh salad. You can also use different types of fish if desired.
