Ingredients
  

  • 2 cups shredded cooked chicken rotisserie recommended
  • 8 oz cream cheese softened
  • 1/2 cup buffalo sauce Frank's RedHot preferred
  • 1/2 cup ranch dressing or blue cheese dressing
  • 1 cup shredded cheddar cheese divided
  • 1/2 cup shredded mozzarella cheese
  • Optional garnishes: chopped green onions crumbled blue cheese
  • Optional substitutions: poached or grilled chicken different hot sauces, reduced-fat or vegan cheeses, plant-based ranch

Method
 

  1. Preheat oven to 375°F (190°C). Grease a 9×9-inch baking dish.
  2. In a large bowl, combine shredded chicken with softened cream cheese until smooth.
  3. Add buffalo sauce, ranch dressing, 1/2 cup cheddar cheese, and all mozzarella. Mix well.
  4. Spread mixture evenly in baking dish. Top with remaining 1/2 cup cheddar cheese.
  5. Bake 20–25 minutes until hot, bubbly, and golden brown on top.
  6. Cool 2–3 minutes, garnish as desired, and serve hot.

Notes

Yields about 8 servings. Best served hot with chips, celery, or baguette slices. Prepare mixture up to 24 hours ahead for easy entertaining. Store leftovers in fridge up to 3 days or freeze unbaked for up to 3 months.
