Ingredients
  

  • 120 g All-Purpose Flour
  • 2 tsp Baking Powder
  • 1 tsp Baking Soda
  • 0.5 tsp Salt
  • 240 g Cottage Cheese
  • 30 g Maple Syrup
  • 120 ml Almond Milk
  • 1 Egg
  • 30 g Coconut Oil (melted)

Method
 

  1. First, preheat your waffle iron to medium heat.
  2. In a large bowl mix together all of the dry ingredients. Set aside.
  3. Add the cottage cheese and almond milk to a high-speed blender and blend until smooth.
  4. Transfer the blended cottage cheese to a large mixing bowl. Whisk in the egg and melted coconut oil.
  5. Slowly add the dry ingredients to the wet. Mix until combined.
  6. Spray the waffle iron with cooking spray on both sides. Then, scoop in about ½ cup of batter. Close the waffle iron and cook for 2-3 minutes.
  7. Serve with your favorite waffle toppings.

Notes

These waffles are best served fresh and can be topped with fruits, yogurt, or additional maple syrup for extra flavor.
