Ingredients
  

  • 480 g cooked corn kernels
  • 340 g full-fat cottage cheese
  • 40 g diced red onion
  • 1 small jalapeno (minced)
  • 40 g chopped fresh cilantro
  • 30 ml lime juice
  • 15 ml olive oil
  • 5 tsp chili powder
  • 2.5 tsp smoked paprika
  • 2.5 tsp salt
  • 1.25 tsp black pepper
  • 40 g crumbled cotija cheese (optional)

Method
 

  1. Cook and cool corn if using fresh.
  2. Blend cottage cheese until smooth if desired.
  3. Combine all ingredients in a large bowl.
  4. Stir until evenly coated.
  5. Chill before serving and garnish as desired.

Notes

For added flavor, consider garnishing with extra cilantro or a squeeze of lime before serving.
