Ingredients
  

  • 240 g cottage cheese
  • 1 large egg
  • 120 ml tomato sauce low-sugar preferred
  • 30 g lean turkey pepperoni
  • 60 g shredded mozzarella cheese
  • optional mushrooms
  • optional bell peppers
  • optional spinach
  • optional olives

Method
 

  1. Preheat your oven to 375°F (190°C). Grease your oven-safe bowls or ramekins with a little olive oil or non-stick spray.
  2. In a medium mixing bowl, whisk together cottage cheese, egg, and tomato sauce until smooth and combined.
  3. If using mushrooms, spinach, or peppers, quickly sauté them in a non-stick pan over medium heat for 3-4 minutes to reduce moisture.
  4. Spoon the cottage cheese mixture evenly into the bowls. Top each with sautéed veggies (if using), turkey pepperoni, and shredded mozzarella cheese.
  5. Bake for 15-20 minutes, until the eggs are fully set and cheese is bubbly and golden.
  6. Cool for 5 minutes, then garnish with fresh basil or oregano if desired.
  7. Serve immediately or cool completely before storing for meal prep.
