- Preheat your oven to 375°F (190°C). Grease your oven-safe bowls or ramekins with a little olive oil or non-stick spray.
- In a medium mixing bowl, whisk together cottage cheese, egg, and tomato sauce until smooth and combined.
- If using mushrooms, spinach, or peppers, quickly sauté them in a non-stick pan over medium heat for 3-4 minutes to reduce moisture.
- Spoon the cottage cheese mixture evenly into the bowls. Top each with sautéed veggies (if using), turkey pepperoni, and shredded mozzarella cheese.
- Bake for 15-20 minutes, until the eggs are fully set and cheese is bubbly and golden.
- Cool for 5 minutes, then garnish with fresh basil or oregano if desired.
- Serve immediately or cool completely before storing for meal prep.
