Ingredients
  

  • 240 g cottage cheese (full-fat)
  • 60 g peanut butter (natural)
  • 30 ml sweetener (maple syrup or sugar-free alternative)
  • 5 ml vanilla extract
  • 1.25 tsp salt (optional) Omit if you prefer a low-sodium option.
  • 56.7 g dark chocolate chips
  • 5 ml coconut oil

Method
 

  1. Blend cottage cheese, peanut butter, sweetener, vanilla extract, and salt until smooth.
  2. Adjust consistency with milk if too thick; blend again.
  3. Chill mousse in the refrigerator for 15-20 minutes.
  4. Melt dark chocolate chips with coconut oil in the microwave until smooth.
  5. Serve chilled, drizzled with melted chocolate and topped with chopped peanuts.

Notes

This mousse can be topped with chopped peanuts for added crunch or served with fruit for a refreshing twist.
