Ingredients
  

  • 450 g diced chicken breast cut into bite-sized pieces
  • 120 g cottage cheese full-fat recommended
  • 40 g grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • to taste Salt
  • to taste freshly ground black pepper
  • 15 ml olive oil
  • optional chopped fresh parsley for garnish
  • optional lemon zest for garnish
  • optional smoked paprika for flavor
  • optional crushed red pepper flakes for heat
  • optional shredded mozzarella for extra cheese

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, toss diced chicken with olive oil, garlic powder, Italian seasoning, salt, and pepper until evenly coated.
  3. In another bowl, stir together cottage cheese and grated Parmesan until thick and well combined.
  4. Mix the cottage cheese mixture into the seasoned chicken, ensuring each piece is thoroughly coated.
  5. Arrange the coated chicken pieces close together on the prepared baking sheet to form pull-apart clusters.
  6. Bake for 15–18 minutes or until the chicken is cooked through and the tops are golden.
  7. For an extra touch, broil for 1–2 minutes, watching carefully, to deepen color and crisp the Parmesan.
  8. Let rest for 2–3 minutes, garnish with parsley and lemon zest if desired, and serve with your favorite holiday dips.
