- Preheat the oven to 350 degrees Fahrenheit. Line a muffin tin with silicone muffin cup liners or grease a nonstick muffin tin.
- Blend ingredients to make the batter. Add cottage cheese, rolled oats, eggs, maple syrup, vanilla extract, baking powder, cinnamon, nutmeg, and salt to a blender and blend until smooth, about 30 seconds. Do not over-blend.
- Stir in chocolate chips. Add most of the chocolate chips (saving about 1 tablespoon) to your blender and stir to combine. Let the batter sit for 5 minutes to thicken.
- Using a cookie scoop, fill 9 muffin tins. Sprinkle with remaining chocolate chips. Bake for 22-25 minutes until golden brown on top. Let cool for a couple of minutes.
Notes
These muffins are great for breakfast or as a snack. Feel free to add fruits or nuts for extra flavor and nutrition.
