Ingredients
  

  • 339 g high-protein 4% cottage cheese
  • 3 large eggs
  • 225 g honey or use 1 cup + 2 tablespoons coconut sugar
  • 72 g unsweetened Dutch process cocoa powder
  • 120 g dark chocolate chips optional for added richness
  • 60 ml canned coconut milk for optional frosting

Method
 

  1. Preheat oven to 350°F (177°C).
  2. Line an 8-inch square baking pan with parchment paper.
  3. Add the cottage cheese, eggs, and honey to a blender. Blend until completely smooth.
  4. Add the cocoa powder and blend again until the batter is fully combined and smooth.
  5. Pour the batter into the prepared pan and spread evenly.
  6. Bake for 40–45 minutes, or until the center is set and a toothpick inserted into the center comes out mostly clean.
  7. Let the brownies cool completely.
  8. For the best texture and flavor, refrigerate for several hours or overnight before slicing.

Notes

These brownies taste even better after chilling in the refrigerator. Serve with a scoop of ice cream for a delightful dessert!
