Ingredients
  

  • 225 g cottage cheese
  • 2 large eggs
  • 60 g Greek yogurt
  • 100 g oat flour
  • 60 g peanut butter optional
  • 3 tbsp honey or maple syrup
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 0.5 tsp cinnamon
  • 0.25 tsp salt

Method
 

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Blend cottage cheese in a blender or food processor for about 45 seconds until completely smooth with no lumps.
  3. In a bowl, whisk together the blended cottage cheese, eggs, Greek yogurt, peanut butter, honey, and vanilla extract until smooth and combined.
  4. In a separate bowl, whisk oat flour, baking powder, cinnamon, and salt.
  5. Fold the dry ingredients into the wet ingredients with a spatula until no flour streaks remain. Do not overmix.
  6. Use a tablespoon or cookie scoop to drop dough onto the baking sheet, spacing about 2 inches apart.
  7. Bake for 15-18 minutes until edges are lightly golden but centers remain soft.
  8. Cool on baking sheet for 5 minutes, then transfer to a cooling rack to finish cooling.

Notes

These cookies are great served warm and can be stored in an airtight container for several days.
