- Preheat your oven to 325°F and grease an 8×8 inch baking dish.
- In a blender, combine cottage cheese, eggs, vanilla, maple syrup, and sugar. Blend until smooth, for 60-90 seconds.
- In a separate bowl, whisk together almond flour, cocoa powder, baking soda, and salt.
- Pour the wet mixture into the dry ingredients and fold gently until just combined.
- Fold in the chocolate chips and pour the batter into the prepared baking dish, spreading evenly.
- Bake for 18-22 minutes until the top is set and a toothpick comes out with a few moist crumbs. Let cool for 5 minutes before cutting into squares.
Notes
For an even richer chocolate flavor, you can add a tablespoon of instant espresso powder to the dry ingredients. Ensure the brownies cool completely for easier, cleaner cuts.
