Method
 

  1. Preheat your oven to 325°F and grease an 8×8 inch baking dish.
  2. In a blender, combine cottage cheese, eggs, vanilla, maple syrup, and sugar. Blend until smooth, for 60-90 seconds.
  3. In a separate bowl, whisk together almond flour, cocoa powder, baking soda, and salt.
  4. Pour the wet mixture into the dry ingredients and fold gently until just combined.
  5. Fold in the chocolate chips and pour the batter into the prepared baking dish, spreading evenly.
  6. Bake for 18-22 minutes until the top is set and a toothpick comes out with a few moist crumbs. Let cool for 5 minutes before cutting into squares.

Notes

For an even richer chocolate flavor, you can add a tablespoon of instant espresso powder to the dry ingredients. Ensure the brownies cool completely for easier, cleaner cuts.
