- Drain the pineapple well using a fine-mesh strainer.
- In a large mixing bowl, combine the thawed Cool Whip and dry instant vanilla pudding mix until smooth.
- Gently fold in the drained pineapple, mini vegan marshmallows, shredded coconut (if using), and chopped nuts.
- Optionally, fold in sour cream or vanilla yogurt for extra creaminess.
- Taste and adjust sweetness by stirring in powdered sugar if desired.
- Refrigerate for at least 1 hour before serving to allow flavors to meld.
