Ingredients
  

  • 227 g Cool Whip thawed
  • 96 g instant vanilla pudding mix
  • 150 g mini vegan marshmallows
  • 567 g crushed pineapple or pineapple tidbits, drained
  • 50 g shredded coconut optional
  • 50 g chopped walnuts or pecans
  • 120 g sour cream or vanilla yogurt, optional

Method
 

  1. Drain the pineapple well using a fine-mesh strainer.
  2. In a large mixing bowl, combine the thawed Cool Whip and dry instant vanilla pudding mix until smooth.
  3. Gently fold in the drained pineapple, mini vegan marshmallows, shredded coconut (if using), and chopped nuts.
  4. Optionally, fold in sour cream or vanilla yogurt for extra creaminess.
  5. Taste and adjust sweetness by stirring in powdered sugar if desired.
  6. Refrigerate for at least 1 hour before serving to allow flavors to meld.
  7. Serve cold and enjoy!

Notes

This dessert can be made a day in advance for even better flavor. Feel free to add other fruits or nuts based on your preference.
