- Heat olive oil in a large skillet over medium-high heat. Add ground beef and onion, breaking up the beef with a spoon. Cook until beef is browned and onion is softened, about 7-10 minutes. Drain any excess fat.
- Stir in bell pepper and minced garlic. Cook for another 2-3 minutes until fragrant.
- Add salt, black pepper, diced tomatoes (undrained), beef stock, rice, tomato paste, and Worcestershire sauce. Stir to combine. Bring to a simmer, then reduce heat to low, cover, and cook for 20-25 minutes, or until rice is tender and liquid is absorbed.
- Remove from heat. Stir in shredded cheddar cheese until melted and creamy. Garnish with fresh parsley before serving.
