Ingredients
  

  • 240 g all-purpose flour
  • 200 g sugar
  • 1 tsp baking soda
  • 6 g baking powder
  • 3 g salt
  • 8 g cinnamon
  • 240 ml 2% milk
  • 15 ml lemon juice
  • 80 ml vegetable oil
  • 5 ml vanilla extract
  • 2 large eggs
  • 90 g brown sugar
  • 12 g cinnamon
  • 30 g melted butter

  • 9 x 5-inch bread pan

Method
 

  1. Preheat oven to 350°F. Grease and flour a 9 x 5-inch bread pan.
  2. In a medium bowl, whisk together dry ingredients (flour, sugar, baking soda, baking powder, salt, cinnamon).
  3. In a large bowl, combine wet ingredients (milk and lemon juice) and let sit for 5 minutes before adding oil, vanilla extract, and eggs. Mix gently.
  4. Gradually add dry ingredients to wet mixture until just combined.
  5. For the swirl, mix together brown sugar, cinnamon, and melted butter.
  6. Pour half the batter into the pan; drizzle with swirl mixture and use a toothpick to create swirls. Add remaining batter and top with more swirl mixture.
  7. Bake for about 50 minutes or until a toothpick comes out clean. Cool in the pan for five minutes before transferring to a wire rack.

Notes

Great for breakfast or as a snack! You can add nuts or dried fruits for extra flavor.
