- Scoop the mixture into small portions and roll into bite-sized balls.
- Place the truffle balls on a parchment-lined tray and chill in the refrigerator for 30 minutes or freeze for 15 minutes until firm.
- Melt the white melting wafers or white chocolate in a microwave-safe bowl in short intervals, stirring until smooth.
- Dip each chilled truffle into the melted coating, letting the excess drip off.
- Place the coated truffles back on the lined tray and immediately top with Christmas sprinkles.
- Let the coating set completely, then serve or store in the refrigerator.
