Method
- Preheat oven to 325°F (163°C). In a bowl, mix graham cracker crumbs and melted butter until combined. Press evenly into the bottom of a greased 9x9 inch baking pan.
- In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then stir in vanilla extract.
- Fold chocolate chips into the cheesecake mixture. Pour over the crust and spread evenly.
- Bake for 35 minutes or until edges are set and center is slightly jiggly. Cool completely, then refrigerate for at least 2 hours before cutting into bars.
Notes
These bars are best served chilled and can be stored in the refrigerator for up to a week. Feel free to add nuts or other toppings for variation.
