- Marinate the chicken by blending half of the chipotle peppers, garlic, salt, and lime juice. Toss with chicken and refrigerate for 2 hours or overnight.
- Cook the rice according to the package directions, adding lime juice and zest, and fluff with cilantro when done.
- In a large pan, cook the marinated chicken in batches over medium-high heat for about 7 minutes each, until seared.
- Assemble the bowls with a base of cilantro lime rice, topped with chicken, lettuce, black beans, corn, and your choice of toppings.
