Ingredients
  

  • 680 g boneless, skinless chicken thighs cut into 1/2-inch bite-sized pieces
  • 30 ml olive oil
  • 60 ml lime juice freshly squeezed
  • 15 g chili powder
  • 10 g ground cumin
  • 5 g smoked paprika
  • 5 g garlic powder
  • 2.5 g onion powder
  • 5 g salt
  • 2.5 g black pepper
  • 12 pieces small corn tortillas
  • 75 g white onion finely diced
  • 15 g fresh cilantro chopped
  • 2 pieces limes cut into wedges for serving

Method
 

  1. In a medium bowl, whisk together the olive oil, lime juice, chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper to create the marinade.
  2. Add the bite-sized chicken pieces to the marinade and toss until every piece is well-coated. Cover and refrigerate for at least 30 minutes or up to 8 hours.
  3. Heat a large skillet or cast-iron pan over medium-high heat. Add the marinated chicken to the hot pan in a single layer.
  4. Cook for 4-6 minutes per side, until the chicken is cooked through and nicely charred. Remove from pan.
  5. Warm the corn tortillas one by one in a dry skillet, over a gas flame, or in the microwave until soft and pliable.
  6. Assemble the tacos by placing a portion of the cooked chicken on each warm tortilla. Top with a sprinkle of diced onion and fresh cilantro. Serve immediately with lime wedges.
