Ingredients
  

  • 396 g Sweetened Condensed Milk
  • 510 g High-Quality White Chocolate Chips
  • 28 g Unsalted Butter
  • 5 ml Pure Vanilla Extract
  • 1/4 tsp Salt
  • 2 drops Red Food Coloring optional, for color
  • 283 g Maraschino Cherries drained, patted dry, and chopped
  • 170 g Semi-Sweet Chocolate Chips divided
  • 8 pieces Whole maraschino cherries with stems for garnish

  • 8x8-inch baking pan

Method
 

  1. Line an 8x8-inch baking pan with parchment paper, leaving an overhang on two sides.
  2. Thoroughly drain and chop the maraschino cherries, removing stems from all but the garnish cherries.
  3. In a heavy-bottomed saucepan over low heat, combine the sweetened condensed milk, white chocolate chips, and salt. Stir constantly until smooth.
  4. Remove from heat and stir in the butter, followed by the vanilla extract and red food coloring until consistent.
  5. Gently fold in the chopped maraschino cherries and ¾ cup of semi-sweet chocolate chips.
  6. Pour the fudge into the prepared pan and spread evenly. Sprinkle remaining chocolate chips on top and arrange whole cherries for garnish.
  7. Refrigerate for at least 4 hours, or until completely firm, before slicing.

Notes

For best results, refrigerate the fudge overnight before slicing. Feel free to adjust the amount of cherries based on your preference.
