Ingredients
  

  • 3 cups rotini pasta cooked al dente and cooled for best texture
  • 1 lb ground beef browned and thoroughly drained of fat
  • 1 oz taco seasoning use a 1 oz packet or 2 tablespoons of homemade seasoning
  • 1 pint cherry tomatoes halved for easy eating and even distribution
  • 4 units green onions thinly sliced, including white and green parts
  • 2 cups shredded cheese a blend of cheddar and Monterey Jack for optimal flavor
  • 1 cup Catalina dressing or a similar sweet and tangy French-style dressing
  • 1.5 cups Doritos lightly crushed, any flavor can be used

Method
 

  1. In a large bowl, toss together the cooked pasta, taco-seasoned ground beef, cherry tomatoes, green onions, and cheese.
  2. Pour in the Catalina dressing and give it all a good mix until everything’s coated.
  3. You can pop it in the fridge to chill or serve it right away.
  4. Fold in the crushed Doritos right before serving so they stay nice and crunchy.

Notes

Feel free to adjust the amount of dressing to your preference. For an extra kick, add some sliced jalapeños or a dash of hot sauce.
