Cheesy Taco Pasta

Ingredients
  

  • 340 g pasta shells or elbow macaroni
  • 15 ml olive oil
  • 450 g ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning mix
  • 410 g diced tomatoes with green chilies
  • 240 ml salsa
  • 200 g shredded cheddar cheese
  • to taste Salt
  • to taste pepper
  • to garnish Chopped fresh cilantro

Method
 

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the ground beef and cook until browned. Drain excess fat.
  3. Add the diced onion and minced garlic to the skillet. Cook for about 3 minutes, or until the onion becomes translucent.
  4. Stir in the taco seasoning mix and cook for 1 minute, making sure the beef is well coated.
  5. Add the diced tomatoes with green chilies and salsa to the skillet. Stir to combine.
  6. Let the mixture simmer on low for about 5-7 minutes, allowing the flavors to meld together.
  7. Reduce the heat to low and stir in the cooked pasta.
  8. Gradually add the shredded cheddar cheese, stirring continuously until melted and well combined.
  9. Taste and season with salt and pepper as needed.
  10. Remove from heat and garnish with chopped fresh cilantro before serving.
