- Preheat oven to 375°F.
- Cook ground beef in a skillet until browned; drain grease.
- Add onion, bell pepper, and garlic; cook until softened.
- Stir in taco seasoning, cumin, chili powder, paprika, salt, and pepper.
- Add cauliflower rice and drained Rotel; heat through.
- Mix in cream cheese until melted, if using.
- Transfer mixture to a greased 9×13 baking dish.
- Top with shredded cheese.
- Bake 20–25 minutes until bubbly.
- Let rest 5–10 minutes; add toppings and serve.
Notes
This casserole is very versatile; feel free to add other low-carb vegetables like zucchini or spinach. It reheats well for meal prep and makes for great leftovers!
