Ingredients
  

  • 1 lb ground beef 80/20 blend recommended
  • 1 tbsp olive oil or avocado/vegetable oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 3 medium potatoes peeled and diced
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • ½ tsp dried oregano
  • 1 cup shredded cheddar cheese
  • ½ cup beef broth low sodium preferred
  • 1 tbsp fresh parsley chopped

Method
 

  1. Heat olive oil in a large skillet. Add ground beef and cook 6–8 minutes until browned.
  2. Add onion and garlic; cook 3–4 minutes until fragrant.
  3. Stir in diced potatoes, salt, pepper, paprika, and oregano until coated.
  4. Pour in beef broth, cover, reduce heat, and simmer 20–25 minutes until potatoes are tender.
  5. Sprinkle cheddar cheese evenly over the skillet. Cover and cook 2–3 minutes until melted.
  6. Garnish with parsley and serve hot.

Notes

Cut potatoes evenly into ½-inch cubes for consistent cooking. Wait until the final minutes to add cheese for the perfect melt.
