- Mix cream cheese, powdered sugar, and vanilla extract until smooth. Scoop into small balls and freeze for 20-30 minutes to firm up.
- Beat unsalted butter with brown and granulated sugars until fluffy. Add eggs and vanilla extract. In another bowl, combine flour, baking soda, and salt; fold into wet ingredients. Mix in chocolate chips.
- Cover the dough and chill in the refrigerator for 15-20 minutes.
- Flatten a portion of chilled dough, place a cheesecake ball in the center, wrap dough around and seal to form a ball.
- Preheat oven to 350°F (175°C) and bake cookies for 13-15 minutes until edges are golden brown.
- Allow cookies to cool slightly on baking sheet before transferring to a wire rack for complete cooling.
