Ingredients
  

Fruit Mixture
  • 2 cups strawberries hulled and sliced, for freshness and easy eating
  • 2 cups green apples chopped into bite-sized pieces for texture
  • 1 cup grapes (red or green) halved for easy enjoyment and to release juices
  • 1 cup pineapple chunks (fresh or canned) drained well if canned to prevent excess liquid
  • 1 cup bananas sliced just before assembly to prevent browning
Cheesecake Filling
  • 8 oz cream cheese softened at room temperature for a smooth filling
  • 0.5 cup powdered sugar sifted for a lump-free cheesecake filling
  • 0.5 tsp vanilla extract pure vanilla extract for best flavor
  • 1 cup heavy whipping cream chilled for optimal whipping to stiff peaks
Garnish
  • 0.5 cup caramel sauce (store-bought or homemade) for drizzling, adjust amount to your preference
  • 100 g Crushed graham crackers for garnish, providing a delightful crunch

Method
 

  1. Wash, hull, chop, and slice all fruits as directed. Combine in a large mixing bowl.
  2. Beat softened cream cheese, powdered sugar, and vanilla until smooth.
  3. In a separate bowl, whip heavy cream to stiff peaks.
  4. Gently fold the whipped cream into the cream cheese mixture.
  5. Pour the cheesecake filling over the fruit and gently fold until all fruit is evenly coated.
  6. Drizzle caramel sauce generously over the salad or serve it on the side.
  7. Refrigerate for at least 1 hour. Garnish with extra caramel drizzle or crushed graham crackers before serving. Enjoy!

Notes

This salad is best served chilled. For an extra touch, you can add other berries or stone fruits in season. Adjust the sweetness to your liking by increasing or decreasing the powdered sugar.
