- Pour 9 cups of Rice Chex into a large mixing bowl. Set aside.
- In a microwave-safe bowl, combine white chocolate chips and caramel bits. Microwave in 30-second bursts, stirring between each, until smooth and melted.
- Stir in vanilla extract and a pinch of salt.
- Pour the caramel mixture over the Chex and stir gently to coat every piece.
- In a small bowl, combine apple pie spice, powdered sugar, and granulated sugar.
- Sprinkle the sugar mixture over the cereal and toss until everything is coated.
- Fold in crushed dried apple chips.
- Spread the mix on parchment paper and let it cool completely before serving.
Notes
For an extra touch, try adding chopped nuts or other dried fruits to the mix!
