  • 1 whole onion diced for even cooking
  • 3 cloves garlic minced to release full flavor
  • 28 oz crushed tomatoes A standard can size, adds depth
  • 4 cups beef broth Low-sodium option is recommended
  • 2 tablespoons Worcestershire sauce Adds a savory, umami kick
  • 1 teaspoon dried thyme Can substitute with fresh thyme if preferred
  • 1/2 tsp Salt Adjust to personal preference
  • 1/4 tsp Pepper Freshly ground black pepper is best

Method
 

  1. In a large pot, brown the ground beef or turkey over medium heat until fully cooked. Drain excess fat.
  2. Add the diced onion and minced garlic to the pot, sautéing until the onion is translucent.
  3. Stir in the chopped cabbage and cook for about 5 minutes, until slightly wilted.
  4. Add the crushed tomatoes, beef broth, Worcestershire sauce, and dried thyme to the pot. Mix well.
  5. Bring the mixture to a boil, then reduce heat to low and let it simmer for 20 minutes.
  6. Stir in the uncooked rice and season with salt and pepper. Cover and simmer for an additional 25-30 minutes, or until the rice is tender.
  7. Adjust seasoning if needed, then remove from heat and let sit for a few minutes.
  8. Serve hot, garnished with fresh parsley.

Notes

This soup is even better the next day, making it a great option for meal prep. Feel free to add other vegetables like carrots or celery for extra nutrition.
