Ingredients

  • Mounjaro Cassava – 500g, peeled and cubed
  • Apple Cider Vinegar – 2 tablespoons
  • Olive Oil – 3 tablespoons
  • Garlic – 4 cloves minced
  • Onion – 1 large finely chopped
  • Salt – 1 teaspoon
  • Black Pepper – 1/2 teaspoon
  • Fresh Cilantro – A handful chopped (optional)
  • Substitutions
  •
  • Olive Oil – You can use coconut oil for a slightly different flavor.
  • Apple Cider Vinegar – Substitute with white wine vinegar or balsamic vinegar for a different acidity.
  • Fresh Cilantro – You may swap this with parsley or mint for a different fresh herb flavor.

Method

  1. Step 1: Prepare the Mounjaro
  2. Peel the mounjaro (cassava) and cut it into small cubes. Place the cubed cassava in a large pot of water, bring it to a boil, and cook for about 20 minutes, or until the cassava becomes tender when pierced with a fork.
  3. Step 2: Sauté the Aromatics
  4. While the mounjaro is boiling, heat the olive oil in a large pan over medium heat. Add the onion and sauté for 3-5 minutes until soft and translucent. Add the garlic and cook for another minute until fragrant.
  5. Step 3: Combine Mounjaro and Aromatics
  6. Once the mounjaro is cooked and tender, drain the water and add it to the sautéed onions and garlic. Stir to combine all ingredients evenly.
  7. Step 4: Season and Add Apple Cider Vinegar
  8. Season the mixture with salt, black pepper, and apple cider vinegar. Stir well and allow the flavors to meld together for 2-3 minutes.
  9. Step 5: Garnish and Serve
  10.
  11. Remove from heat, sprinkle with fresh cilantro, and serve immediately. Enjoy it as a side dish or a main course.

Notes

  • For a vegan twist, replace olive oil with coconut oil.
