Ingredients
  

  • 1.5 pounds boneless, skinless chicken breasts About 4 pieces, lightly pound to ½ inch thickness.
  • 1 cup fresh blueberries For the sweet and tangy sauce.
  • 1 tablespoon fresh thyme leaves Alternatively, use 1 teaspoon dried thyme.
  • 3 tablespoons honey Adjust the sweetness according to preference.
  • 2 tablespoons olive oil Used for cooking chicken and sautéing garlic.
  • 2 cloves garlic Minced, for aromatic flavor in the sauce.
  • 1/2 tsp salt Season chicken and sauce to taste.
  • 1/4 tsp pepper Freshly ground black pepper is recommended, season to taste.
  • 50 ml lemon Use the fresh juice of one lemon for brightness.

Method
 

  1. Lightly pound chicken breasts to an even thickness (about ½ inch) using a meat mallet. Season both sides with salt and pepper.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the seasoned chicken breasts and cook for 6-7 minutes per side, until golden brown and cooked through. Remove chicken and set aside.
  3. In the same skillet, reduce heat to medium. Sauté minced garlic for 30 seconds until fragrant. Add fresh blueberries, honey, thyme, and lemon juice. Stir and cook for 5-7 minutes until blueberries soften and the sauce thickens.
  4. Return the chicken to the skillet, spooning the blueberry sauce over it. Simmer for 2-3 minutes to warm the chicken and meld flavors.
  5. Remove from heat and serve warm, drizzled with the blueberry sauce.

Notes

This dish pairs wonderfully with rice, quinoa, or a fresh green salad. Garnish with extra fresh thyme if desired.
