- Lightly pound chicken breasts to an even thickness (about ½ inch) using a meat mallet. Season both sides with salt and pepper.
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the seasoned chicken breasts and cook for 6-7 minutes per side, until golden brown and cooked through. Remove chicken and set aside.
- In the same skillet, reduce heat to medium. Sauté minced garlic for 30 seconds until fragrant. Add fresh blueberries, honey, thyme, and lemon juice. Stir and cook for 5-7 minutes until blueberries soften and the sauce thickens.
- Return the chicken to the skillet, spooning the blueberry sauce over it. Simmer for 2-3 minutes to warm the chicken and meld flavors.
- Remove from heat and serve warm, drizzled with the blueberry sauce.
Notes
This dish pairs wonderfully with rice, quinoa, or a fresh green salad. Garnish with extra fresh thyme if desired.
