Ingredients
  

  • 450 g white chocolate chips Use a good quality brand for best results.
  • 397 g sweetened condensed milk Ensure it is not evaporated milk.
  • 28 g unsalted butter
  • 5 ml vanilla extract
  • 1 tsp salt
  • 112 g blueberry preserves or jam Warmed slightly.

Method
 

  1. Line an 8x8 inch baking pan with parchment paper, allowing the sides to overhang.
  2. In a large microwave-safe bowl, combine white chocolate chips, sweetened condensed milk, and butter. Microwave in 30-second intervals, stirring between each, until fully melted and smooth.
  3. Remove from microwave and stir in the vanilla extract and salt until well combined.
  4. Pour the fudge mixture into the prepared pan and spread evenly.
  5. Warm the blueberry preserves for 15-20 seconds. Drop spoonfuls over the fudge and use a knife to gently swirl it into the white chocolate base. Do not overmix.
  6. Refrigerate for at least 4 hours, or until the fudge is completely firm.
  7. Use the parchment paper to lift the fudge from the pan. Cut into 36 small squares and serve.

This fudge can be stored in an airtight container in the fridge for a week, perfect for sharing with friends or enjoying as a treat!
