Ingredients

  • 12 oz Medjool dates pitted
  • 2/3 cup boiling water
  • 3/4 cup peanut butter
  • 2 tablespoons flaxmeal
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup oat flour
  • 3/4 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1/2 cup dark chocolate chips
  • Sea salt flakes optional

Method

  1. Preheat oven to 350°F (180°C) and line a 9-inch square pan with parchment paper.
  2. Soak pitted dates in boiling water for 10 minutes.
  3. Transfer soaked dates and water to a food processor. Add peanut butter, flaxmeal, and baking soda, then blend until smooth.
  4. Add oat flour, cocoa powder, and vanilla; pulse until combined. Fold in chocolate chips.
  5. Spread batter into prepared pan, smoothing with parchment paper.
  6. Bake 25–30 minutes until the top is set and slightly cracked but center still soft.
  7. Cool completely before slicing.

Notes

Use plump Medjool dates for best texture. If dates are firm, soak longer to ensure a smooth paste and fudgy brownies.
