Method
- Preheat oven to 350°F and line an 8×8 pan with parchment paper.
- Mix oats, flour, brown sugar, baking soda, and salt.
- Add melted butter, egg, and vanilla, mixing until crumbly.
- Reserve 1 cup of mixture for topping.
- Press remaining mixture into pan to form crust.
- Mix strawberries, honey, lemon juice, and cornstarch.
- Spread filling evenly over crust.
- Sprinkle reserved crumble over top.
- Bake for 35–40 minutes until golden.
- Cool completely before slicing and serving.
Notes
Use fresh strawberries for best texture. Allow bars to cool fully before cutting to prevent crumbling. Do not overmix crumble for best tender texture.
