- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- Mash the banana in a large bowl until smooth.
- Add the eggs, water, and vegetable oil, then whisk until well combined.
- Stir in the sugar and pancake mix just until combined.
- Gently fold in the chopped strawberries.
- Pour the batter into the prepared loaf pan.
- Bake for 40–50 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool slightly before removing from the pan and serving.

Pat the strawberries dry before adding them to the batter to prevent excess moisture and ensure a perfectly baked loaf.
