Ingredients
  

  • 1 overripe banana
  • 2 large eggs
  • 1/4 cup water
  • 1/2 cup vegetable oil
  • 1/3 cup granulated sugar
  • 2 cups Krusteaz Pancake Mix
  • 1 cup fresh strawberries chopped

Method
 

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. Mash the banana in a large bowl until smooth.
  3. Add the eggs, water, and vegetable oil, then whisk until well combined.
  4. Stir in the sugar and pancake mix just until combined.
  5. Gently fold in the chopped strawberries.
  6. Pour the batter into the prepared loaf pan.
  7. Bake for 40–50 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let cool slightly before removing from the pan and serving.

Notes

Pat the strawberries dry before adding them to the batter to prevent excess moisture and ensure a perfectly baked loaf.
