Ingredients
  

  • 4 boneless skinless chicken breasts (about 6 oz each)
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • Salt and black pepper to taste
  • 1 cup fresh or frozen cranberries
  • 1 cup orange juice freshly squeezed preferred
  • 1 tbsp orange zest
  • 1/4 cup honey
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp Dijon mustard
  • Fresh parsley for garnish optional

Method
 

  1. Preheat oven to 375°F (190°C). Pat chicken dry with paper towels.
  2. Season both sides with salt, pepper, and garlic powder. Let rest 5–10 minutes.
  3. Heat olive oil in an oven-safe skillet over medium-high heat. Sear chicken 5 minutes per side until golden brown.
  4. In a bowl, whisk together cranberries, orange juice, orange zest, honey, soy sauce, and Dijon mustard.
  5. Pour glaze over chicken in skillet and transfer to oven.
  6. Bake 25–30 minutes, basting halfway through, until chicken reaches 165°F (75°C).
  7. Remove from oven and rest 5 minutes before serving. Garnish with parsley and spoon glaze over top.

Notes

Use frozen cranberries if fresh aren’t available. For a thicker glaze, simmer a few extra minutes or stir in a cornstarch slurry. Garnish with extra orange zest for color and brightness.
