  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 tsp salt
  • 1/4 tsp baking powder
  • 1/2 cup mini chocolate chips
  • 1 cup shredded coconut
  • 1/2 cup marshmallow fluff or mini marshmallows
  • 1/2 cup heavy cream
  • 1 tbsp butter
  • 1/4 tsp vanilla extract

Method
 

  1. Preheat oven to 350°F and line an 8x8-inch pan with parchment paper.
  2. Whisk melted butter and sugar until glossy.
  3. Add eggs and vanilla and mix until smooth.
  4. Stir in cocoa powder, flour, salt, and baking powder just until combined.
  5. Fold in chocolate chips.
  6. Spread batter evenly in prepared pan.
  7. Bake for 20 to 25 minutes until moist crumbs appear on a toothpick.
  8. Cool brownies completely.
  9. Heat heavy cream, butter, and vanilla until steaming.
  10. Stir in marshmallow fluff until smooth.
  11. Spread topping over cooled brownies.
  12. Sprinkle evenly with shredded coconut.
  13. Chill for 30 minutes before slicing.

Notes

Cool brownies fully before adding topping to prevent sliding and use parchment paper for easy removal.
