Ingredients
  

  • 2 cups fresh cherries pitted and halved
  • 1 to 2 tsp granulated sugar
  • 1 1/3 cups granulated sugar
  • 2 large eggs
  • 1 large egg yolk
  • 5 tbsp unsalted butter melted
  • 1/3 cup vegetable or canola oil
  • 1 tsp vanilla extract
  • 3/4 cup all-purpose flour
  • 3/4 cup Dutch-process cocoa powder
  • 1 tbsp cornstarch
  • 1 tsp salt
  • 1 cup semi-sweet chocolate chips

Method
 

  1. Preheat oven to 400°F and line a baking sheet with parchment.
  2. Spread cherries on sheet, sprinkle with sugar, and roast for 10 minutes.
  3. Lower oven temperature to 325°F.
  4. Line an 8x8-inch pan with parchment and spray lightly.
  5. Sift flour, cocoa powder, cornstarch, and salt together.
  6. Beat sugar, eggs, and egg yolk on high speed for 5 minutes.
  7. Mix in melted butter, oil, and vanilla until combined.
  8. Fold dry ingredients gently into wet mixture.
  9. Fold in half of the roasted cherries and chocolate chips.
  10. Spread batter evenly into prepared pan.
  11. Bake for 40 to 50 minutes until edges are set and center is slightly soft.
  12. Cool completely, then chill briefly before slicing.
  13. Top with remaining cherries before serving.

Notes

Do not overmix the batter and allow brownies to cool fully for clean, fudgy slices.
