- Preheat oven to 400°F and line a baking sheet with parchment.
- Spread cherries on sheet, sprinkle with sugar, and roast for 10 minutes.
- Lower oven temperature to 325°F.
- Line an 8x8-inch pan with parchment and spray lightly.
- Sift flour, cocoa powder, cornstarch, and salt together.
- Beat sugar, eggs, and egg yolk on high speed for 5 minutes.
- Mix in melted butter, oil, and vanilla until combined.
- Fold dry ingredients gently into wet mixture.
- Fold in half of the roasted cherries and chocolate chips.
- Spread batter evenly into prepared pan.
- Bake for 40 to 50 minutes until edges are set and center is slightly soft.
- Cool completely, then chill briefly before slicing.
- Top with remaining cherries before serving.
Notes
Do not overmix the batter and allow brownies to cool fully for clean, fudgy slices.
