- Preheat Oven: Set oven to 400°F (200°C) and lightly grease a baking dish large enough for all fillets.
- Make Glaze: In a bowl, whisk brown sugar, soy sauce, vinegar, garlic, and ginger until smooth.
- Prepare Salmon: Pat fillets dry, rub with olive oil, and season with salt and pepper.
- Arrange & Glaze: Place salmon in dish, spoon two-thirds of glaze over fillets, and scatter diced pineapple around them.
- Bake: Cook for 12–15 minutes or until salmon flakes easily and is opaque throughout.
- Optional Broil: Broil 1–2 minutes for caramelization, watching closely to prevent burning.
- Rest & Serve: Let rest 5 minutes, garnish with parsley, and drizzle with remaining glaze before serving.
Notes
For best results, do not overcook salmon — remove it once it flakes easily. Always pat dry before seasoning to help glaze adhere and caramelize properly. Prepare glaze ahead of time for a quick weeknight dinner option.
