  • 1 fresh pineapple peeled and sliced into 1/4-inch rings or chunks
  • 2 cups granulated sugar
  • 1 cup apple cider vinegar
  • 1 tablespoon crushed red pepper flakes
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon salt

Method
 

  1. Peel, core, and slice the pineapple into uniform rings or chunks.
  2. In a large pot, combine sugar, apple cider vinegar, red pepper flakes, cinnamon, ginger, and salt.
  3. Heat over medium heat, stirring until the sugar is completely dissolved.
  4. Bring the syrup to a boil.
  5. Add the pineapple slices and reduce heat to a simmer.
  6. Simmer for 10 to 15 minutes, stirring occasionally, until pineapple is glossy and slightly translucent.
  7. Remove from heat and allow mixture to cool for 20 to 30 minutes.
  8. Spoon pineapple and syrup into sterilized jars, leaving 1/2-inch headspace.
  9. Seal jars and refrigerate overnight before using.

Adjust red pepper flakes to control heat level and use uniformly sliced pineapple for best texture.
