Method
- Whisk together soy sauce, honey, olive oil, garlic, ginger, lime juice, salt, and black pepper.
- Add chicken cubes and toss to coat evenly.
- Cover and marinate for at least 30 minutes.
- Preheat grill to medium-high heat and oil grates lightly.
- Thread chicken and pineapple alternately onto skewers.
- Grill skewers for 10 to 12 minutes, turning every 2 to 3 minutes.
- Cook until chicken reaches 165°F and is lightly charred.
- Remove from grill and rest for 3 minutes.
- Garnish with chopped chives before serving.
Notes
Do not overcrowd skewers and always soak wooden skewers to prevent burning.
