Ingredients
  

  • 1 1/2 lb boneless skinless chicken breast, cut into 1 1/2-inch cubes
  • 3 cups pineapple chunks
  • 1/4 cup low-sodium soy sauce
  • 3 tbsp honey
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1 tsp fresh grated ginger
  • 1 tbsp lime juice
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 2 tbsp chopped chives or green onion
  • 8 to 10 skewers

Method
 

  1. Whisk together soy sauce, honey, olive oil, garlic, ginger, lime juice, salt, and black pepper.
  2. Add chicken cubes and toss to coat evenly.
  3. Cover and marinate for at least 30 minutes.
  4. Preheat grill to medium-high heat and oil grates lightly.
  5. Thread chicken and pineapple alternately onto skewers.
  6. Grill skewers for 10 to 12 minutes, turning every 2 to 3 minutes.
  7. Cook until chicken reaches 165°F and is lightly charred.
  8. Remove from grill and rest for 3 minutes.
  9. Garnish with chopped chives before serving.

Notes

Do not overcrowd skewers and always soak wooden skewers to prevent burning.
